Tropical Salmon Steak Marinate salmon steaks in 1-1.5 tbsp on olive oil, zest of a lime, and juice of half of a lime. Season with salt and pepper for added taste. Marinate for 10-12 min on each side (or longer) While the salmon steaks are marinating- Prepare the coconut rice. Bring rice, water and coconut milk to a boil in saucepan. Cover on reduced heat and simmer for 20 minutes. Remove from heat, fluff up rice with a fork and let stand. Prepare the mango salsa- Dice the mango (more ripe the better) and the tomato; chip the jalapeño, red onion, and coriander. Mix in a bowl with leftover olive oil and lime juice. Add daily and pepper to taste. In a oiled non-stick skillet, dear the salmon steak for 3-4 min on each side or until cooked. Serve the salmon on a bed of coconut rice with mango salsa.
