Here we go again with another divine dinner idea!!!! Today I made Greek meatballs with a variety of veggies, orzo, and a mix of toppings! I have been making a variation of meatballs for different styles of meals so the Greek meatballs were a very easy version to make. I grated some zucchini and combined it with ground turkey, red onion, feta, egg, and breadcrumbs. I chopped up zucchini, sweet potato, onion, and tomato and tossed it in some olive oil and salt. Then you just bake the meatballs with the assorted veggies at 350 for 20 minutes or until the veggies are done cooking. The orzo is cooked in chicken broth to enhance the flavor instead of just cooking it in water. I topped the bowl with tzatziki, hummus, and feta! I will say this was my favorite meal since we have been back at school!! So insanely delectable!!
