A spicy take on the standard grilled cheese sandwich with lots of cheese, ranch dressing, and buffalo chicken.
Ingredients: 2 slices bread. 1 cooked chicken breast, shredded. 1/4 cup buffalo sauce. 1/4 cup ranch dressing. 1/2 cup shredded mozzarella cheese. 1/4 cup blue cheese crumbles. 2 tablespoons butter.
Instructions: In a bowl, mix the shredded chicken with buffalo sauce until evenly coated. Spread ranch dressing on one side of each bread slice. Place half of the mozzarella cheese on one bread slice, followed by the buffalo chicken mixture, blue cheese crumbles, and remaining mozzarella cheese. Top with the other bread slice, ranch side down. In a skillet over medium heat, melt 1 tablespoon of butter. Place the sandwich in the skillet and cook until the bottom is golden brown and cheese is melted, about 3-4 minutes. Flip the sandwich, add the remaining butter to the skillet, and cook until the other side is golden brown and cheese is melted, about 3-4 minutes more. Remove from the skillet, slice, and serve hot.
