Ingredients: 2 boneless, skinless chicken breasts. 1 tablespoon olive oil. Salt and pepper to taste. 4 pieces of flatbread. 1 cup baby spinach leaves. 1/2 cup sliced red onions. 1/2 cup sliced tomatoes. 1/4 cup crumbled feta cheese. 1/4 cup tzatziki sauce.
Instructions: Preheat grill or grill pan to medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper. Grill chicken for 6-8 minutes on each side or until cooked through. Remove chicken from grill and let it rest for a few minutes before slicing thinly. Place flatbread on grill for 1-2 minutes on each side to warm up and get grill marks.
