Ingredients: 4 lingcod fillets 6 ounces each. 2 tablespoons olive oil. 1 lemon, thinly sliced. 2 cloves garlic, minced. 1 teaspoon lemon zest. 1 teaspoon black pepper. 1/2 teaspoon salt. Fresh parsley, chopped for garnish.
Instructions: Preheat grill to medium-high heat. In a small bowl, combine olive oil, minced garlic, lemon zest, black pepper, and salt. Brush both sides of lingcod fillets with the olive oil mixture. Place lemon slices on top of each fillet. Grill fillets for about 4-5 minutes per side, or until fish flakes easily with a fork. Remove from grill and garnish with fresh parsley before serving.
