Savory oyster mushrooms and crispy tofu are combined in this dish, which is served over fragrant coconut rice. It becomes a filling and delectable meal with the addition of richness and depth of flavor from the peanut sauce.
Ingredients: 1 cup jasmine rice. 1 cup canned coconut milk. 1 cup water. 1 tablespoon soy sauce. 1 tablespoon peanut butter. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 block tofu, pressed and cubed. 1 cup oyster mushrooms, sliced. 2 tablespoons cornstarch. 2 tablespoons vegetable oil. Salt and pepper to taste. Chopped peanuts and green onions for garnish.
Instructions: Jasmine rice, coconut milk, water, peanut butter, soy sauce, rice vinegar, and sesame oil should all be combined in a saucepan. After bringing to a boil, lower the heat to a simmer, cover, and cook the rice for 15 to 20 minutes, or until the liquid has been absorbed. Tofu cubes should be seasoned with salt and pepper and coated in cornstarch in the interim. In a skillet, heat the vegetable oil over medium heat. Add the tofu cubes and cook for 5 to 7 minutes, or until they are crispy and golden brown on all sides. Take out and place aside the tofu from the skillet. Add the oyster mushrooms to the same skillet and cook for 3 to 5 minutes, or until they are tender. Over coconut rice, serve crispy peanut tofu with oyster mushrooms. Add chopped peanuts and green onions as garnish. Have fun!
