A convenient stir-fry format that allows you to enjoy the flavors of your favorite egg rolls in a quick and delicious way is the Egg Roll Stir Fry. This dish is full of flavorful ground pork and vegetables, making it an ideal weeknight dinner.
Ingredients: 2 cups of cooked white rice. 2 tablespoons vegetable oil. 1 pound ground pork. 1 small onion, diced. 2 cloves garlic, minced. 1 cup shredded cabbage. 1 cup shredded carrots. 1/2 cup frozen peas. 1/4 cup soy sauce. 1 teaspoon sesame oil. 1/2 teaspoon ginger powder. Salt and pepper to taste. Sliced green onions for garnish.
Instructions: In a big skillet or wok, heat up one tablespoon of vegetable oil on medium-high heat. Using a spatula, break up the ground pork as it cooks until it turns brown. Eliminate any extra fat. Transfer the pork to one side of the skillet and coat the empty side with the remaining tablespoon of vegetable oil. When the onions are fragrant and translucent, add the diced onions and minced garlic to the skillet and saut for two to three minutes. Add frozen peas, carrots, and shredded cabbage and stir. Cook the vegetables for a further three to four minutes, stirring now and then, until they are crisp-tender. After adding the cooked white rice to the skillet, cover the contents with the sesame oil and soy sauce. Add pepper, salt, and ginger powder. To fully heat the rice, stir everything together and cook for a further two to three minutes. If needed, adjust the seasoning by tasting it. Present the Stirred Egg Rolls. Fry hot, with sliced green onions as a garnish. Have fun!
