This Slow Cooker Guinness Shepherd's Pie is a comforting and hearty meal perfect for cozy nights. The addition of Guinness stout adds depth of flavor to the meat filling, while the creamy mashed potatoes and melted cheddar cheese create a satisfying topping.
Ingredients: 1 lb ground lamb or beef. 1 onion, diced. 2 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 cup frozen peas. 1 cup beef or vegetable broth. 1/2 cup Guinness stout. 2 tbsp tomato paste. 2 tbsp Worcestershire sauce. 1 tsp dried thyme. Salt and pepper to taste. 4 cups mashed potatoes. 1 cup shredded cheddar cheese.
Instructions: Over medium heat, brown the ground lamb or beef in a pan. Take the meat out of the fat and put it in the slow cooker. Cut up some onion, garlic, carrots, celery, and frozen peas and put them in the slow cooker. Beer or vegetable broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper should all be mixed together in a bowl. Add the mix to the slow cooker with the meat and vegetables. Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours. Spread the mashed potatoes out evenly on top of the meat and vegetables in the slow cooker once they are soft. Place small pieces of cheddar cheese on top of the mashed potatoes. Put the lid on top and cook on high for another 30 minutes, or until the cheese melts and bubbles. Enjoy while hot!
