Ingredients: 1 head cauliflower, cut into florets. 4 slices bacon, chopped. 2 cloves garlic, minced. 4 cups kale, chopped. 1/4 cup heavy cream. Salt and pepper to taste. Chopped scallions for garnish.
Instructions: Steam cauliflower florets until tender, then mash them until smooth. In a skillet, cook chopped bacon until crispy. Remove bacon and set aside, leaving the grease in the skillet. Add minced garlic to the skillet and cook until fragrant. Add chopped kale to the skillet and cook until wilted. Stir in mashed cauliflower and heavy cream, mixing well. Season with salt and pepper to taste. Top with crispy bacon and chopped scallions before serving.
