Grilled Oysters with Parsley-Parm Butter
Does having oysters imprison you to going out to a restaurant? Have you heard over and over how hard oysters are to open and nightmare stories of lost fingers over shucking? Well that stops here. Below is a foolproof recipe to make all oyster lovers smile!
3 Dozen Oysters (I recommend Blue Points)
1 Stick of Salted Butter
1 Bunch of Fresh Parsley
3 tbsp Parmesan Cheese
Pinch Red Pepper Flakes
INSTRUCTIONS: scrub the oysters with a coarse brush and store in a ice water bath. Put butter, Parmesan Cheese, a few pinches of chopped parsley and red pepper flakes (to taste) in a microwavable bowl. Heat the grill to Med/High for 10 minutes. Place the oysters cup side down directly on the grill and close the top for 2-3 minutes. Microwave the butter until melted. Once oysters begin to open pull the oysters off the grill and use a fork and place in the crack of the oyster and peel the top shell off. (if it's not open - ditch it). Pour the butter over each oyster and top with parsley leaf - serve hot.
