What did you eat today, Erica? I know you're having troubles with eating and all that, so I'm wondering the steps you're taking!
Today was my first day post-hospital visit that scared the daylights out of me, so I’m glad I got this today! I have more than no breakfast / raw veggies / pan fried veggies as a daily intake to share!
I always start my morning with hot lemon detox water
Breakfast was a big bowl of homemade buckwheat granola with a fresh peach and fresh blueberries
I promised myself I would stay hydrated, so I spent the day carrying around a mason jar with this beauty of a vitamin water concoction
Lunch was homemade olive hummus, carrots + cucumber + tomatoes +bell peppers, roasted sweet potatoes and homemade chickpea flour chips for dipping, as well as some Mary’s organic gluten-free seed crackers as an added dipping treat
Afternoon snack (I finally had one! I did it!!) was fresh mango wedges with homemade almond butter and gooey medjool dates
My dinner was this beautiful Roasted Brussels Sprout Quinoa with Portobello Mushrooms and Pomegranate dish, and I had it with an ear of corn - all so yummy and fresh!
Finally, I am now munching on a crunchy apple, an apricot, some homemade banana and date buckwheat bread and drinking a carrot + strawberry + ginger juice. Everything is so YUMMY.
I’m trying to go to bed earlier too, so even though it’s only 9:40, I’m already settled into bed catching up on this lovely website and then I’m going to crash. Treating my body well, that’s all I can do! The hospital gave me a task: spend as much time as possible with, around and loving myself. That’s a task I’m taking seriously. I want to be healthy again, move out and start my adult life - so treating myself with kindness is something I am excited about.
