This Healthy Crock Pot BBQ Pulled Chicken is a healthy take on a classic comfort food. With lean chicken breasts and a homemade BBQ sauce that is full of flavor, it's a tasty and filling meal that's great for busy weeknights or weekend get-togethers.
Ingredients: 2 lbs boneless, skinless chicken breasts. 1 cup low-sodium chicken broth. 1 cup BBQ sauce. 1/4 cup apple cider vinegar. 2 tablespoons honey. 1 tablespoon Worcestershire sauce. 1 teaspoon smoked paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste.
Instructions: Place chicken breasts at the bottom of the slow cooker. In a mixing bowl, combine chicken broth, BBQ sauce, apple cider vinegar, honey, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well. Pour the mixture over the chicken in the slow cooker, making sure the chicken is evenly coated. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is tender and easily shreds with a fork. Once cooked, shred the chicken using two forks directly in the slow cooker. Let the shredded chicken soak in the sauce for an additional 15-20 minutes to absorb the flavors. Serve the pulled chicken on whole grain buns or lettuce wraps, topped with additional BBQ sauce if desired. Enjoy!
