This Mirabelle Plum Jam is a delightful blend of sweet and tart flavors, made vegan and refined sugar-free by sweetening with pure maple syrup. Chia seeds are used to naturally thicken the jam, creating a perfect spread for toast, muffins, or oatmeal.
Ingredients: 2 lbs Mirabelle plums, pitted and chopped. 1/2 cup pure maple syrup. 2 tbsp chia seeds.
Instructions: In a saucepan, combine chopped Mirabelle plums and maple syrup over medium heat. Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the plums break down and the mixture thickens. Remove from heat and stir in chia seeds. Let the jam cool for 10-15 minutes to allow the chia seeds to thicken the jam further. Transfer the jam to sterilized jars and let it cool completely before sealing. Store in the refrigerator for up to two weeks.
