Ingredients: 1 can 15 oz butter beans, drained and rinsed. 1/3 cup sundried tomatoes, chopped. 1/4 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 tablespoon nutritional yeast. 1 tablespoon soy sauce. 1 tablespoon olive oil. 1 teaspoon dried oregano. 1/2 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: Preheat your oven to 375F 190C. In a mixing bowl, mash the butter beans with a fork or potato masher until mostly smooth. Add in the chopped sundried tomatoes, breadcrumbs, red onion, garlic, nutritional yeast, soy sauce, olive oil, oregano, smoked paprika, salt, and pepper. Mix until well combined. Form the mixture into burger patties and place them on a lined baking sheet. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the burgers are golden brown and firm. Serve the burgers on buns with your favorite toppings and enjoy!
