Pittsburgh Potatoes are a delicious and hearty side dish featuring diced potatoes, onions, bell peppers, melted cheese, and bacon bits. Perfect for a comforting meal or as a tasty addition to any gathering.
Ingredients: 4 large potatoes, scrubbed and diced. 1 onion, finely chopped. 1 green bell pepper, diced. 1/2 cup shredded cheddar cheese. 1/4 cup bacon bits. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. In a large bowl, toss together diced potatoes, chopped onion, diced green bell pepper, olive oil, salt, and pepper until evenly coated. Spread the mixture evenly onto a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown, stirring halfway through. Once cooked, sprinkle shredded cheddar cheese and bacon bits over the potatoes. Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve hot.
