For a quick and easy keto or paleo breakfast, these Easy Quiche Muffins are great. They don't have any nuts in them, are full of protein and vegetables, and taste great.
Ingredients: 6 large eggs. 1/2 cup coconut milk. 1 cup chopped spinach. 1/2 cup diced bell peppers. 1/4 cup diced onions. 1/4 cup diced mushrooms. 1/2 cup cooked and crumbled bacon. 1/2 cup shredded cheddar cheese. 1/2 teaspoon garlic powder. Salt and pepper to taste.
Instructions: Preheat the oven to 350F 175C and grease a muffin tin. In a mixing bowl, whisk together eggs, coconut milk, garlic powder, salt, and pepper. Stir in spinach, bell peppers, onions, mushrooms, bacon, and cheddar cheese. Pour the mixture evenly into the muffin tin. Bake for 20-25 minutes or until the muffins are set and slightly golden on top. Remove from the oven and let cool for a few minutes before serving. Enjoy these delicious keto quiche muffins!
