The Hellenic Republic! (Better known as Greece.) During the 20th Century, Greece flip-flopped between being a monarchy and being a republic rather a few times (and sometimes sort of went with both), until finally settling on a republic in 1973. This stamp enthusiast grew up with a papou and yia yia (and uncles with gorgeous names like Evangelo), believing the best baklava in the whole world was Greek baklava made by my yia yia. Having made it an informal mission to sample as many kinds of baklava the world has on offer, I can comfortably state it’s still true.
