Ingredients: 4 lamb chops. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon fresh rosemary, chopped. 1 tablespoon fresh thyme, chopped. 1 tablespoon fresh parsley, chopped. Salt and black pepper to taste.
Instructions: Preheat the oven to 400F 200C. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, parsley, salt, and black pepper. Rub the herb mixture over both sides of the lamb chops. Place the lamb chops on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes for medium-rare, or longer if desired. Remove from the oven and let the lamb chops rest for a few minutes before serving.
