Ingredients: 4 slices of whole grain bread. 1 zucchini, sliced lengthwise. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 red onion, sliced. 1 cup mixed greens. 4 oz herbed goat cheese. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Preheat a grill or grill pan over medium heat. Brush zucchini, bell peppers, and onion slices with olive oil, then season with salt and pepper. Grill the vegetables until tender and slightly charred, about 3-4 minutes per side. Toast the bread slices on the grill until lightly browned. Spread herbed goat cheese evenly on one side of each toasted bread slice. Layer grilled vegetables and mixed greens on top of the herbed goat cheese on two bread slices. Top with the remaining bread slices to form sandwiches. Slice sandwiches in half and serve immediately.
