Ingredients: 1 whole chicken about 4-5 pounds, giblets removed. 2 teaspoons salt. 1 teaspoon black pepper. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon paprika. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 tablespoon olive oil.
Instructions: In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary. Rub the olive oil over the surface of the chicken. Season the chicken evenly with the spice mixture, rubbing it into the skin. Place the chicken breast side down into the slow cooker. Cover and cook on low for 6-7 hours, or until the internal temperature reaches 165F 75C when tested with a meat thermometer. Carefully remove the chicken from the slow cooker and let it rest for 10 minutes before carving.
