Ingredients: 1 lb white fish fillets such as cod or tilapia. 1 cup all-purpose flour. 1 cup cold sparkling water. 1/2 tsp baking powder. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 tsp cayenne pepper. 1 cup shredded cabbage. 1/4 cup chopped fresh cilantro. 1/4 cup mayonnaise. 1/4 cup sour cream. 1 lime, juiced. 8 small corn tortillas. Vegetable oil for frying. Lime wedges for garnish.
Instructions: In a mixing bowl, whisk together flour, baking powder, salt, black pepper, and cayenne pepper. Slowly add the sparkling water while whisking until a smooth batter forms. Let it rest for 10 minutes. Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium-high heat. Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it in the hot oil. Fry until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
