Making Kholodets tonight/tomorrow. Slow cooking a pig foot and three quarters of a pork hock for the entire night. I’ll separate the meat from the bone and clarify the resulting gelatin broth. I’ll put the meat bits back in and maybe some of the larger bones too, then boil it again for another thirty minutes. Take out the bones and pour the whole thing in bowls, and refrigerate them until gelatin.
Now all I need is some hard, spicy mustard and horseradish...
