New Years Ferment! Started the new year with a big new batch. Adding mashed potatoes is a new found revelation that went really well in my last kraut. The main batch I made today is carrots, Brussel sprouts, green cabbage and red cabbage. I cut and salted each as I went along, then added cooled mashed potatoes- and a salty brine to keep it below liquid. Then I had leftover big pieces of cabbage that I submerged in the rest of the brine, mixed with a tiny bit of potato (for the starch), plus a little onion- and a capful of apple cider vinegar.
