Ingredients: 3 lbs beef chuck roast, cut into chunks. 1/3 cup apple cider vinegar. 3 chipotle peppers in adobo sauce. 4 cloves garlic, minced. 1 small onion, chopped. 1 tbsp ground cumin. 1 tbsp dried oregano. 1 tbsp smoked paprika. 1 tsp ground cloves. 1/2 cup beef broth. Salt and pepper to taste. 2 tbsp vegetable oil.
Instructions: Apple cider vinegar, garlic, onion, cumin, oregano, paprika, cloves, and beef broth should all be put in a blender. Mix until it's smooth. Add salt and pepper to the beef chunks. Put vegetable oil in a pan and heat it over medium-high heat. On all sides, brown the beef chunks. Put the beef that has been browned in a slow cooker. Mix the chipotle ingredients together and then pour them over the beef in the slow cooker. Put the lid on top and cook on low for 8 hours or high for 4 hours, until the beef is soft and breaks apart easily. Shred the beef with two forks after it's done cooking and mix it well with the sauce. Grilled chicken can be put on salads, burritos, tacos, or bowls.
