Ingredients: 1 whole beef brisket 10-12 pounds. 1/4 cup kosher salt. 1/4 cup black pepper, freshly ground. 1/4 cup paprika. 1/4 cup brown sugar. 2 tablespoons garlic powder. 2 tablespoons onion powder. 1 tablespoon cayenne pepper. Wood chips hickory or mesquite, soaked in water.
Instructions: Remove any surplus fat from the brisket, preserving a minimal layer for taste. To make the rub, combine the kosher salt, cayenne pepper, black pepper, paprika, brown sugar, onion powder, and garlic powder in a bowl. Apply a generous layer of the rub to the brisket, making sure it coats every side equally. For maximum flavor absorption, cover the seasoned brisket with plastic wrap and refrigerate for at least 4 hours or overnight. Set your smoker's temperature to 225F 107C and add chips of mesquite or hickory wood to smoke it. After positioning the brisket on the smoker grates, pierce the thickest portion of the meat with a meat thermometer. For a tender result, smoke the brisket for 1.5 to 2 hours per pound, or until the internal temperature reaches 200F 93C.
