Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 2 tablespoons chopped fresh rosemary. Salt and pepper to taste. 4 ripe peaches, sliced. 4 cups mixed salad greens. 1/2 cup crumbled feta cheese. 1/4 cup chopped walnuts. Balsamic vinaigrette dressing.
Instructions: Preheat grill to medium-high heat. In a small bowl, mix together olive oil, rosemary, salt, and pepper. Brush the rosemary mixture over the chicken breasts. Grill chicken for 6-8 minutes per side, or until cooked through. Remove chicken from grill and let it rest for a few minutes before slicing.
