VEGETABLE COUSCOUS - My first dish in my new series #whatsforbreakfast Couscous is originally a Moroccon style semolina made from durum wheat. Its a North African type pasta which i came across when i was living in Mauritius. I fell in love with this the first time i tried. It can be used in variety of ways. I made this like indian style mix veg upma with tomatoes. It can also be use in salads so it will be filling or like Pilaf/ Pulav. Recipe for 2: • 1 cup Couscous ( i have used the HT traders Moroccan style pasta from Harris Teeter @harristeeter ) • 1.5 cup water. Add 1/2 cup more water than your couscous qty. • 1/2 cup chopped onions • 1/2 cup chopped tomatoes • 2 green chillies slit ( use as per ur spice level) • 1/2 cup chopped mix veg ( carrots, french beans, peas etc) • 1/2 tsp cumin seeds • 2-3 curry leaves • 1 tbsp oil for tempering • Salt to taste • Chopped Cilantro / Coriander leaves Method: • Add oil in pan and let it warm. • Add cumin seeds, let it crackle. Add curry leaves abd green chillies. • Add onions and mix veg and saute for a while. Let it cook. • Add tomatoes, salt and cilantro. Mix them and leave for half a minute. • Add the couscous. Mix well. Now add 1.5 cup water and let it cook. Close the lid of the pan and let it cook. • Check the couscous to see if water has evaporated. The couscous might stick to pan bottom so mix it with spatula. • Switch off the flame and let it stay there for 5 more mins. Serve hot with a cup of ginger tea!
