Three mouthwatering hummus-based vegan pizzas: Mean Green, stuffed with veggies; Hummus Beet, topped with roasted beets; and Crunchy Indian, topped with spiced chickpeas. Ideal for a night of pizza!
Ingredients: 1 pizza dough store-bought or homemade. 1 cup hummus store-bought or homemade. 1 cup spinach leaves. 1/2 cup broccoli florets. 1/2 cup green bell pepper, sliced. 1/2 cup red onion, thinly sliced. 1/2 cup cherry tomatoes, halved. 1/2 cup roasted beets, thinly sliced. 1/2 cup chickpeas, cooked and seasoned. 1/2 cup sliced olives. 1/2 cup vegan cheese optional. 1 tsp olive oil. Salt and pepper to taste. 1 tsp red pepper flakes optional. 1 tsp cumin powder optional. 1 tsp garam masala optional. Fresh cilantro leaves for garnish optional.
Instructions: Preheat your oven to 475F 245C and place a pizza stone or baking sheet in the oven while it heats up. Roll out the pizza dough on a lightly floured surface to your desired thickness. Place the rolled-out dough on parchment paper for easy transfer to the hot baking surface. Spread a generous layer of hummus evenly over the pizza dough as the base sauce. For the Mean Green pizza: - Scatter spinach leaves, broccoli florets, green bell pepper, red onion, and cherry tomatoes over the hummus. - Drizzle with olive oil and season with salt and pepper to taste. - Optionally, add vegan cheese for extra creaminess. For the Hummus Beet pizza: - Arrange the roasted beet slices and sliced olives on top of the hummus base. - Optionally, sprinkle with red pepper flakes for some heat. For the Crunchy Indian pizza: - Sprinkle the chickpeas evenly over the hummus. - Add cumin powder and garam masala for a hint of Indian flavor. Carefully transfer the parchment paper with the assembled pizza onto the hot baking surface in the oven. Bake for about 10-12 minutes or until the pizza crust is golden and the toppings are cooked to your liking. Remove from the oven and let it cool for a minute before slicing.
