Ingredients: 1 cup cooked chickpeas. 1/4 cup tahini. 1/4 cup pickled vegetable brine. 2 tablespoons olive oil. 1 clove garlic, minced. 1/2 teaspoon cumin. Salt and pepper to taste. Assorted pickled vegetables carrots, cucumbers, etc.. Fresh parsley, chopped for garnish.
Instructions: In a food processor, combine the cooked chickpeas, tahini, pickled vegetable brine, olive oil, minced garlic, cumin, salt, and pepper. Blend until smooth and creamy, scraping down the sides of the processor as needed. Taste and adjust the seasoning, adding more salt, pepper, or cumin as desired. Transfer the hummus to a bowl. Chop the assorted pickled vegetables into small pieces. Fold the chopped pickled vegetables into the hummus until well distributed. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, garnish the hummus with chopped fresh parsley. Serve the pickled vegetable hummus with crackers, pita bread, or fresh vegetable sticks.
