Certainly, there is some variation there. The color in question usually comes from some other substance infusing the Energon crystals, altering the usual energetic taste of the energon itself.
Red Energon, for instance, is infused with volatile and dangerous gases, giving it its characteristic colouration. While many find the volatility gives hypergeon a pleasant tingling, I find no reason to scorch my gustatory sensors with it.
Green energon has much more of a conductive flavor, making it an acquired taste, although one I am partial to. I often store some in a subspace pocket to enjoy during the quiet periods when there is no immediate crisis to deal with.
And of course you may be familiar with the most common form of energon, harvested as energetic blue crystals, but which is then condensed into a more radioactive pink. Naturally there are many disagreements over which is the better-tasting, but I prefer the dry radioactivity found in a good energon wine.
