Piggy protein plate
Something I threw together five minutes ago with leftover impossible sausage. I was going to do a breakfast burrito, but I had too much sugar-y, carb-y stuff last night. Trying not to fall back into old habits.
3 tbs already cooked impossible sausage or the serving size (which is only 8 ounces. I wanted food.)
1-2 slices sharp cheddar
2 tbs diced jalapenos from a jar
a couple splashes of hot sauce
4 tbs (or the serving size of 1/2 C) cottage cheese on the side (optional if it seems gross or something, but this counts for a lot of protein!)
4 fried eggs (very optional, but even more good protein!)
Get out your impossible sausage. Microwave for 1 minute 30 seconds or until hot, or pan fry it again. Put on your cheese and microwave or cook until melted. Add diced jalapenos. Put your hot sauce wherever, I like mine on the side. Plate, leaving enough room for the cottage cheese next to it or put it in a bowl if that's too much. Fry up some eggs if desired or instead of the cottage cheese. Makes for a tasty brunch.
I was going to call it the pig protein plate, but piggy is cuter. I know, no pig in it, so it's more in reference to stuffing yourself. (Even though you're not.)

NOTE TO SELF: The Starbucks in the AC Hotel in Frisco microwaves this sandwich better than any other Starbucks.

NOTE TO SELF: At least at the AC Hotel Starbucks they know how long to heat it. This sandwich is somehow, against all logic, better than the same sandwich at any other Starbucks. But it still isn't that great.
