In Bengal this cult classic onion fritters is known as PIYANJI. You can have this anytime of the day, but Bengali people prefer to have it as afternoon or evening snacks when nonstop chit-chat is going on. NO WATER ORIGINAL BENGALI STYLE ONION FRITTERS RECIPE . Recipe : Take medium sized 4 sliced onions, add 5/6 chopped green chillies, salt to taste, half teaspoon of kalonji or Nigella or black cumin seeds and mix. . After 1/2min add 2 to 3 tablespoons of gram flour or besan accordingly step by step and mix. This will take time as onion will release water. . Don't add water. The water comes from onion will be enough. Cause this batter shouldn't be thin. And gram flour should be less in quantity in terms of onion. When you mix onion and salt, the onion will release water and it'll be soft and moist. . Make the fritters in a round flattened shape. Because that is what a ideal PIYANJI should look like. . Heat oil in a pan to deep fry. In low to medium flame deep fry the fritters until it becomes golden red in colour. . Enjoy with masala tea and nonstop chit-chat. .
