Umami-flavored meatballs that are delicious and cooked just right in the Instant Pot. It's a quick and easy meal that works great on busy weeknights.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 2 cloves garlic, minced. 1 large egg. 1 cup beef broth. 1/4 cup soy sauce. 2 tbsp tomato paste. 1 tbsp Worcestershire sauce. 1 tbsp brown sugar. 1 tsp dried oregano. 1/2 tsp black pepper. 1/4 tsp red pepper flakes optional.
Instructions: Put breadcrumbs, egg, parsley, garlic, ground beef, and Parmesan cheese in a large bowl. Mix everything together well. Make meatballs out of the mixture that are about an inch across. Put tomato paste, Worcestershire sauce, brown sugar, oregano, black pepper, and red pepper flakes into the Instant Pot. Then add the beef broth. Slowly add the meatballs to the Instant Pot's sauce. Turn the vent all the way down and close the lid. Then cook on high pressure for 8 minutes. When the time for cooking is up, quickly let the pressure out. Open the lid slowly and carefully, then move the meatballs to a serving dish. You can make the sauce thicker by setting the cooker to saut mode and letting it simmer for a few minutes. Add the sauce to the meatballs and serve them over rice or noodles.
