My first attempt at making an approximation of Waterford Blaas. I say approximation because this bread roll comes from Waterford, Ireland and, just as Champagne can only be called so if it's made in Champagne, France, a batch of these can only technically be called Blaas if they were baked in their native town. But these are close enough, the recipe courtesy of Gemma Stafford (@biggerbolderbaking) and her mother, Patrica, who grew up in Waterford. Instead of going out for St. Paddy's Day this year, my sister and I will be going over to our mom and stepdad's for a nice, social-distancing dinner of homemade beef and Guinness stew, with these rolls served alongside it.
