I am . . . sharing some tips and tricks I learned about working with isomalt . . . I would not call these everyday cookies but over-the-top cookies that add to any celebration.
What is a isomalt
it’s like a type of sugar but not really? hang on lemme find a definition:
“Isomalt is a sugar substitute, a type of sugar alcohol used primarily for its sugar-like physical properties. It has little to no impact on blood sugar levels, and does not stimulate the release of insulin.” -Wikipedia
apparently it’s often derived from beet sugar.
isomalt is often used to create sugar art, mimicking the appearance of glass. it is also often used for stunt glass, such as window panes or glass bottles or whatever glass is going to be broken. far less dangerous.
this is an example of isomalt used in movies.
breakaway glass, while sometimes being plastic, is often made of isomalt.
an important thing to know about isomalt is that while edible, if you eat too much then it will give you the shits. you cannot fully digest isomalt, so the unabsorbed sugar alcohols can act as a laxative due to the fermentation from the flora in your gut, which pulls water out of your body and into your intestines. thus, acidic niagara falls will shoot out of your ass at high velocity. ever heard of sugar free gummy bears? same principle.
now, despite this little unfortunate detail, isomalt is still a very beautiful and versatile substance for cake decorating.

isomalt is perfect for achieving a stained glass effect in cake decorating. if not handled properly, it may cause burns because hot sugar burns you. sugar retains heat, it’s not rocket science. handle with care, folks.
and please, for the love of all that is holy, dont fucking eat isomalt. you will regret it.
