Jaggery Dosa is a sweet and delicious South Indian pancake made with rice flour, jaggery, and coconut. It's a perfect breakfast or snack option for those with a sweet tooth.
Ingredients: 1 cup rice flour. 1/4 cup jaggery grated. 1/4 cup grated coconut. 1/4 tsp cardamom powder. A pinch of salt. Water as needed. Ghee or oil for cooking.
Instructions: Put rice flour, grated coconut, grated jaggery, cardamom powder, and a pinch of salt in a bowl. Add water little by little and mix until you get a smooth batter. It should have the same texture as regular dosa batter. Set a dosa pan or nonstick skillet on medium heat. Use a little ghee or oil to grease it. Put a small amount of the jaggery dosa batter on the hot pan and spread it out so that it forms a thin circle. Put some ghee or oil around the edges of the dosa and cook it until the bottom turns golden brown. The dosa should be cooked on both sides until it is golden brown and crispy. Take the jaggery dosa out of the pan and do it again with the rest of the batter. You can eat the jaggery dosa plain or serve it hot with your favorite chutney.
