Ingredients: 4 cups blackberries. 2 cups granulated sugar. 1 vanilla bean, split and scraped. 1/4 cup bourbon.
Instructions: The blackberries, sugar, and vanilla bean scraps should all be combined in a big saucepan. Simmer on medium heat, stirring periodically, for about 10 minutes, or until the blackberries begin to release their juices and the sugar starts to dissolve. After adding the bourbon to the blackberry mixture, cook it for a further 15 to 20 minutes, stirring now and then, until the jam thickens and reaches the right consistency. After taking the saucepan off of the burner, allow the jam to cool slightly. After sterilizing the jars, fill them with the jam, leaving a 1/4-inch headspace. To guarantee appropriate preservation, seal the jars and process them in a boiling water bath for ten minutes. Before storing the jars in a cool, dark location, let them cool completely.
