These Jelly Linzer Sandwiches are delicate and flavorful treats that are perfect for snacking. The combination of almond-infused shortbread cookies with a fruity jelly or jam filling creates a delightful balance of textures and tastes.
Ingredients: 1 cup all-purpose flour. 1/2 cup almond flour. 1/2 cup unsalted butter, softened. 1/3 cup granulated sugar. 1 egg yolk. 1/2 teaspoon vanilla extract. 1/2 cup fruit jelly or jam any flavor of your choice. Powdered sugar, for dusting.
Instructions: All-purpose flour and almond flour should be mixed together in a bowl. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. Mix the butter and vanilla extract together well after adding the egg yolk. Mix the flour mixture into the butter mixture little by little until a dough forms. Cover the dough with plastic wrap and put it in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. To make the dough about 1/4 inch thick, roll it out on a lightly floured surface while it is still cold. Cut out the same number of solid and windowed shapes with a Linzer cookie cutter. Put the cookies on the baking sheet that has been prepared. Bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. On a wire rack, let the cookies cool all the way down. Spread a little jam or fruit jelly on top of the solid cookies. Add powdered sugar to the cookies with the holes in them. Place the cookies in a sandwich, with the side with powdered sugar facing the jelly. Serve and have fun!
