Bossam Suyuk at Jincook

Many Korean dishes use pork as its main ingredient, including jeyuk bokkeum (fried pork), jokbal (steamed pork trotters), pork galbi, duruchigi (stir fried pork), wanja (pork meatballs) and jeon (fried pancakes).

There's one dish, however, without which it's impossible to discuss Korean pork cuisine, and that's bossam suyuk. Succulent boiled pork belly and neck, served with a variety of sauces.

At Jincook, which recently opened near Gangnam Station, they put their secret cooking methods to use eliminating the pork smell, yielding a meat that is tender and savory.
