A healthy and tasty baked breakfast quinoa dish with a touch of maple syrup, juicy plums, and the crunchy goodness of pistachios. The perfect way to start the day with something healthy and tasty!
Ingredients: 1 cup quinoa, rinsed. 2 cups almond milk. 4 plums, pitted and sliced. 1/2 cup pistachios, chopped. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. Pinch of salt.
Instructions: Preheat the oven to 375F 190C. In a saucepan, combine quinoa and almond milk. Bring to a boil, then reduce heat and simmer for 15 minutes until quinoa is cooked and liquid is absorbed. In a large bowl, mix cooked quinoa, plums, pistachios, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Transfer the mixture to a greased baking dish. Bake in the preheated oven for 20-25 minutes or until the top is golden brown. Remove from the oven and let it cool slightly before serving. Drizzle with additional maple syrup and sprinkle with extra chopped pistachios for garnish if desired.
