Here is my contribution to Pi(e) day! Italian Ricotta Easter Pie! Made with barley. Fun fact #1: My (Irish) mother used to complain about SJ ricotta pie because they used rice. It's supposed to be wheat berries but they're a pain to get a hold of, and I remember my (Irish) mother telling me you could use barley instead, and that my Gram (Italian) used to use barley. Can anyone confirm? Fun fact #2: Ricotta cheese is in the same category I put sour cream, cottage cheese and mayo-the "hell no I don't even want to touch the container I might get some on my hands no thank you" category. BUT! I love ricotta desserts-Ricotta Pie, Italian cheesecake, sfogliatella (my favorite pastry!!). So I literally CRINGED the entire time I was mixing the filling and had to keep chanting *it's worth it, the pie will be yummie, you can do it!* And that as been Karate's Pi(e) Day Adventure.
