The southern state of Kerala in India has been a hub of trading activity, particularly for the precious spices, for over two thousand years, having traded with the Romans from the port of Kochi. It is well-positioned for ships travelling the trade routes between Europe, Africa and Arabia in their long voyages to the Far East for restocking and further trade. From this state comes a coconut milk curry with delectable morsels of prawn spiked with mustard, fenugreek, green chilies, garam masala and tangy tamarind. Best served with Indrayani rice, akin to Thai Jasmine rice, sticky, full of flavour and aroma. This variety of Indian rice is a match made in heaven for curries.
