Pull out butter. Knead 5min.
Proof 30min; divide into balls, proof 30min.
Flatten, soften butter+flour, shape, rest 15-30min. Flatten again.
Cook dry 2-3min/side till opaque.
Cook in fat for browning; scrunch/clap immediately.
