The other night I was on pinterest and was looking up keto desserts, as per usual. (Specifically for Easter foods, but that'll be another post!) I ended up finding someone claiming to make keto pudding, so I was intrigued, because uh yeah I'd like to eat pudding lmao.
The person said to use a sugar free packet of vanilla pudding and just replace the milk it normally needs with heavy whipping cream. Seemed easy enough!
It ended up WAY thicker than pudding, so I called it a mousse. Haha. And in order to lower the carb count, I divvied up the mousse into 12 servings, instead of the 6 that was used in the recipe. It's not pretty looking, but it's really rich and definitely hits that "I want a cold, sweet something something" that I get.
I think next time I'll try lemon or chocolate for variety. Or to help people think I'm not just eating mayonnaise, lmao. I also think I'll try to cut down on the heavy whipping cream to try and cut back on the thickness of it, and maybe be able to have a more pudding-like texture.
