Decided to start doing rough costing and macro breakdowns (whenever possible) for my meals.
Pumpkin mousse is unpretty but quite filling. No sweetener makes for an acquired taste, though.
"Bulletproof" tea: herbal citrus tea from Fresh & Easy, 1 T of heavy cream, 1 T of coconut oil, sugar substitute to taste (for me it's 4 drops of EZ-Sweetz). It's pretty much dessert for breakfast. Waiting on a milk frother from Ikea to mix it better, but stirring occasionally works just as well.

Making chia seed pudding for the first time! 1 cup unsweetened almond milk, 1/4 cup chia seeds, 1/2 teaspoon vanilla extract, 4 drops of EZ-Sweetz. Just waiting for it to set in the fridge now! I think after it's done I'll separate it into several portions and try different flavors. One with cocoa powder, one with pumpkin spice, mmm. The plain pudding with vanilla extract only serves 2 and comes in at 143 calories, 7.5g fat, <1g net carb (10.5g of fiber), and 6.5g protein.
Started doing keto seriously on 11/01, have lost about five pounds since then (but my weight has been fluctuating a TON). I'm really surprised at how easy it is for me to eat HFLC. I've always had poor self control but for some reason keto makes it easy for me to say no to bread and sweets.

Dinner: 7 ounces of steak with butter (ate half of it before the photo), creamy tomato basil soup with white cheddar and a cheddar cheese crisp. What’s not to love?
To make the soup:
4 cups chicken broth 28 oz crushed tomatoes 1.5 cup heavy cream 1/2 cup butter 1 bunch fresh basil Salt Pepper
1. Boil the chicken broth, basil and crushed tomatoes for 20-30 minutes. Purée it all until smooth.
2. Add cream, butter, and seasonings. Summer for a little longer.
3. Add sour cream, cheese, etc. for toppings because who doesn’t love toppings?
The soup has: 295 calories, 26.6 g fat, 7.7 total carbs (6 net), 1.3 g protein.
Not a lot of protein, but that’s what steak is for. :)

Ok I HIGHLY recommend getting a milk frother like this one (Ikea, couple $)… So easy to mix bulletproof coffee AND so much more convenient to whip up some mousse from heavy cream :) Fyi- thats pumpkin mousse w/ cinnamon and all dem fall spices~
My keto chocolate mousse concoction is literally just butter, cocoa powder and truvia! It is heaven!!
