This keto chocolate fudge is the perfect sugar-free treat for those following a low-carb diet. It's rich, creamy, and incredibly satisfying without all the added sugar.
Ingredients: 1 cup unsweetened almond butter. 1/2 cup coconut oil. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered erythritol or your preferred keto sweetener. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Line a small square or rectangular pan with parchment paper, leaving some overhang for easy removal. In a microwave-safe bowl, combine the almond butter and coconut oil. Microwave in 20-second intervals, stirring in between, until they are both melted and well combined. Stir in the unsweetened cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt. Mix until smooth and fully combined. Pour the mixture into the prepared pan and spread it out evenly. Place the pan in the refrigerator and let it chill for at least 2 hours or until it becomes firm. Once the fudge has set, use the parchment paper overhangs to lift it out of the pan. Cut it into small squares or rectangles.
