Savor the tart sweetness of key lime pie in the form of marshmallows. These delicious marshmallows are great as a snack or to give your hot cocoa a special twist.
Ingredients: 3/4 cup cold water. 3 tablespoons unflavored gelatin. 1 1/2 cups granulated sugar. 1/2 cup corn syrup. 1/4 cup key lime juice. Zest of 2 key limes. 1/4 teaspoon salt. 1/2 cup powdered sugar. 1/2 cup cornstarch. Green food coloring optional. Crushed graham crackers for coating.
Instructions: Place the gelatin and 1/2 cup of cold water in a mixing bowl. Give it ten minutes to bloom. Place the corn syrup, granulated sugar, and the remaining 1/4 cup of cold water in a saucepan over medium heat. After the sugar dissolves, stir. Turn the heat up to high and boil the sugar syrup. Employing a candy thermometer, bring it to a boiling point of 240F 115C. Pour the hot sugar syrup into the gelatin mixture gradually while continuing to whisk. It will be really hot, so exercise caution. Stir in the lime zest, salted water, and key lime juice. Beat on high speed for 10 to 12 minutes, or until the mixture triples in volume and becomes fluffy, using an electric mixer. If desired, you can add green food coloring. Combine cornstarch and powdered sugar in a different bowl. Coat the 8x8-inch 20x20 cm baking pan with grease and dust with powdered sugar, reserving some for dusting afterwards. Using a spatula, level the top of the marshmallow mixture once it has been poured into the prepared pan. Add a little more of the powdered sugar mixture on top. For optimal results, let the marshmallows sit at room temperature for at least four hours, or even overnight. After it solidifies, take the marshmallow block out of the pan and slice it into squares or other shapes you desire. To resemble the crust of a key lime pie, cover the sliced sides with crushed graham crackers. Savor your homemade marshmallows with key lime pie!
