Last night's podcast meal for me & @jonhoche. Korean Street Cheese Corn Dogs/kimchi fries/spicy pickles. -Dogs/cheese/shrimp: Took regular hot dogs & a block of mozzarella (cut up). Placed them on sticks in a few ways. Complete hot dog. Complete mozzarella "stick". Half dog/half cheese. I did 2 each as well as a few tiger shrimp. (All common in Korean street food). Did my best to roll them all in the batter but it just wasn't sticking well. I think it was a bit too liquidy. Covered all in panko as well. I also rolled a couple in fry bits (see below). Did the best I could & dropped them in hot oil. Didnt turn out pretty but got the job done though the shapes weren't perfect. After frying, rolled them all in sugar. Squeezed ketchup/yellow mustard onto them. (Some have honey mustard or spicy ketchup but I stuck w/ basics). -Batter: I have bad luck w/ batter & this was no different. Mixed flour/baking powder/salt/sugar/eggs/milk & set in fridge til ready to coat dogs. -Fry bits: Chopped up a russet potato into small cubes & fried up. -Kimchi fries: Cut russet potatoes into thin fries & fried them up. Set on baking try. Sprinkled salt/pepper/gojucharu (Korean red pepper flakes/powder) all over & mixed up. Fried some bacon in pan & removed (ate it!). Fried chopped onions in bacon grease & added kimchi. About a 5 minute fry. Chopped up mozzarella into small bits & spread over cheese. Then spread kimchi on fries & then more cheese. (Not smothered in cheese). Placed in oven to melt cheese. -Pickles: Sliced small Kirby cucumbers & small multi-colored carrots up. Put into mason jar. Boiled rice vinegar/soy sauce/sesame oil/salt/gojuchang (Korean red pepper paste)/chopped scallions/chopped garlic/mirin/lemon juice/water. Poured into mason jar & sealed up. Let sit for just under a week. -Result: Well, batter aside...it was okay. Delish but that goddamn batter. (It was fluffy on inside/crunchy on outside still though). Kimchi fries were awesome.
