This vegan twist on the classic grilled cheese sandwich combines creamy avocado, tangy kimchi, and melty vegan cheese for a flavor-packed meal that's quick and easy to make.
Ingredients: 4 slices of vegan bread. 1 ripe avocado, mashed. 1/2 cup vegan kimchi. 1 cup vegan cheese, shredded. 2 tbsp vegan butter.
Instructions: Spread mashed avocado evenly on two slices of bread. Top each avocado-covered slice with half of the vegan cheese. Layer kimchi on top of the cheese. Place the remaining slices of bread on top to form sandwiches. Spread vegan butter on the outsides of the sandwiches. Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and cook until golden brown and crispy, about 3-4 minutes per side. Remove from heat and serve hot.
