Kitchen Witch Recipe : Butternut Alfredo for Remembering Loved Ones
Since it’s Samhain season and the veil is still thin for another week or so (astrologically speaking), I thought it would be nice to share this Autumn favorite that is easily bewitched into a pot of Ancestral Remembrance. Plus it’s just delicious!
These are some of the magical correspondences for this dish, and as you are working with the ingredients you can imbue them and draw out their energy.
Onion - Protection, Strength
Rosemary - Remembering, Loyalty, Honoring Ancestors
Sage - Time of the Crone & Samhain, Protection, Cleansing
Butternut Squash - Sustaining Relationships, Nurturing
Dairy - Family, Nurturing, Completion
Sugar - Sweetness, Home
Salt - Protection, Cleansing
Pepper - Protection, Cleansing
By invoking these qualities from your ingredients, you can create a dish to bring your family closer around the table, to remember those family members who have already passed on, and to nurture your relationship with the ancestors because they are still with you and guiding you. You can even set out an extra place setting to invite a departed loved one to join you at the table.
4 tbsp Butter
1 cup diced Onion
1 tbsp fresh minced Rosemary
1 tbsp fresh minced Sage
3 cups peeled and cubed Butternut Squash
1 cup Vegetable Stock
2 cups Milk
1 cup Parmesan Cheese
2 tbsp Brown Sugar
1/4 tbsp Nutmeg
Salt & Pepper to taste
Fettuccine Noodles, enough that while in the pot the sauce just covers
2 cups Milk
2 cups Water
Melt the butter in a pan over medium heat (I like to use a wooden spoon to move the butter in the pan to draw sigils and symbols), sauté Onion, Rosemary and Sage until translucent and fragrant.
Add cubed squash and stock, cover with a lid and simmer for 15 mins or until tender. Mash with a potato masher and add Milk, Parmesan Cheese, Brown Sugar, Nutmeg, Salt and Pepper. Stir to combine and taste test until seasoning is to your liking. I suggest a strong flavor so it is absorbed well into the pasta.
Add Fettuccine noodles, Milk and Water, making sure noodles are just barely covered by sauce. Stir continuously as noodles cook and absorb liquid. When done, serve immediately topped with parmesan cheese.
